My best blueberry muffins

Ingredients

  • 190 g of unsweetened O'Kassava pancake & waffle mix
  • 1/2 sachet of baking powder (7 g)
  • 1 pinch of salt
  • 2 eggs
  • 90g of powdered sugar
  • 120 ml of milk (preferably fermented milk ). You can also use plant-based milk.
  • 120g of melted butter (or vegetable butter )
  • 100 to 110 g of frozen blueberries 🫐

Cooking method

  1. Preheat the oven to 170°C (338°F) . Line a muffin tin with paper baking cups.
  2. In a bowl, mix the pancake & waffle mix , baking powder and salt .
  3. In another bowl, whisk the eggs and sugar until smooth. Add the milk and melted butter , then mix well.
  4. Gradually incorporate the dry ingredients into the wet mixture until the mixture is just homogeneous ( do not overmix ).
  5. Gently add the frozen blueberries .
  6. Divide the batter evenly among the muffin tins.
  7. Bake for 25 to 50 minutes , or until a toothpick inserted in the center comes out clean.
  8. Let it cool slightly before enjoying. 💛
