Attiéké with vegetables & pan-fried salmon

Ingredients

  • 2 cups of dehydrated attiéké Yummi
  • 2 salmon fillets (150-200 g)
  • 3 tablespoons of olive oil
  • 2 tablespoons of grilled pepper marinade
  • ½ onion (red or yellow), cubed
  • ½ bell pepper (red, yellow or green), cubed
  • A little parsley
  • 1 cup of mixed vegetables (mushrooms, broccoli, etc.) (optional)
  • Salt and pepper (to taste)

Directions

Cooking Attiéké (steaming or microwave)

  • Mix 2 cups of dehydrated attiéké with 2 cups of hot water + 1 pinch of salt. Cover for 10 minutes.
  • Then Steam option: cook 5–7 min, fluff halfway through cooking OR Microwave option: heat 3–4 min.

Sautéed vegetables

  • In a pan, sauté the onion in olive oil.
  • Add the peppers, chopped parsley, then the other vegetables (optional).
  • Pour over the grilled pepper marinade, and cook for 5 minutes.

Pan-fried salmon

  • Season with salt and pepper.
  • Pan-fry for 3–4 minutes on each side in olive oil.

Mix attiéké and vegetables. Serve hot with salmon.
