Golden and crispy salmon, vegetables infused with grilled pepper marinade, attiéké that absorbs every aroma — a simple dish that tastes like a carefully prepared meal.
What you'll need
- 2 cups O'Kassava dehydrated attiéké
- 2 salmon fillets (150-200g each)
- 3 tbsp olive oil
- 2 tbsp grilled pepper marinade
- ½ red or yellow onion, diced
- ½ bell pepper, diced
- Fresh chopped parsley
- 1 cup assorted vegetables — mushrooms, broccoli (optional)
- Salt and pepper
The Recipe
The Attiéké
- Mix the attiéké with 2 cups of hot water and a pinch of salt. Cover and let sit for 10 min.
- Steam for 5-7 min, fluffing halfway through — or microwave for 3-4 min.
The Vegetables
- Sauté the onion in olive oil. Add the bell peppers, parsley, and optional vegetables.
- Pour in the grilled pepper marinade and cook for 5 min over medium heat.
The Salmon
- Season the fillets with salt and pepper. Pan-fry for 3-4 min per side in a drizzle of olive oil.
- Mix the attiéké with the vegetables and serve hot with the salmon.
A squeeze of lemon on the salmon just before serving enhances all the flavors of the dish.
