Recipe: Moist Banana and Cassava Cake

Vegan, keto or classic – one recipe, three ways to treat yourself.

Serves 8 · Prep time 10 min · Cook time 40-45 min

An ultra-moist crumb, the aroma of ripe banana, and natural sweetness with no added sugar – available in vegan or keto versions without sacrificing any indulgence.

What you'll need

  • 3 ripe, mashed bananas
  • 150 g sugar – or erythritol for keto version
  • 3 eggs – or 3 tbsp applesauce for vegan version
  • 120 g melted butter – or coconut oil for vegan version
  • 200 g O’Kassava pancake & waffle mix, no added sugar
  • 1 packet baking powder (11 g)

The recipe

Preheat oven to 180°C. Grease a cake pan.

  1. Mash the bananas and mix with sugar until creamy.
  2. Add the eggs (or vegan substitute) and mix well.
  3. Stir in the melted butter or coconut oil.
  4. Add the O’Kassava mix and baking powder. Mix gently.
  5. Pour into the pan, smooth the top, and bake for 40-45 min.
  6. Let rest for 10 min before unmolding.

The riper and more spotted the bananas, the sweeter and more flavorful the cake will be.
