Recipe: Moist Banana and Cassava Cake

Vegan, keto or classic – one recipe, three ways to treat yourself.

An ultra-moist crumb, the aroma of ripe banana, and natural sweetness with no added sugar – available in vegan or keto versions without sacrificing any indulgence.
What you'll need
- 3 ripe, mashed bananas
- 150 g sugar – or erythritol for keto version
- 3 eggs – or 3 tbsp applesauce for vegan version
- 120 g melted butter – or coconut oil for vegan version
- 200 g O’Kassava pancake & waffle mix, no added sugar
- 1 packet baking powder (11 g)
The recipe
Preheat oven to 180°C. Grease a cake pan.
- Mash the bananas and mix with sugar until creamy.
- Add the eggs (or vegan substitute) and mix well.
- Stir in the melted butter or coconut oil.
- Add the O’Kassava mix and baking powder. Mix gently.
- Pour into the pan, smooth the top, and bake for 40-45 min.
- Let rest for 10 min before unmolding.
The riper and more spotted the bananas, the sweeter and more flavorful the cake will be.
