A few kilometers from Abidjan, Ama wakes up before the sun. Like every day, she joins the other women in the collective to transform freshly harvested cassava into attiéké — by hand, as it has always been done here.
Her hands know every step by heart. Fermentation, pressing, drying. A know-how passed down from generation to generation, that neither a machine nor an algorithm can ever reproduce.
"From harvest to your bag, it takes 6 days — the cassava is peeled by hand, ground, then left to ferment overnight with a traditional starter. The next day, the paste is pressed, rolled into grains, sun-dried, sifted, steamed, then dehydrated to preserve all its aromas. Each step has its own rhythm. You can't go faster. And that's exactly why it tastes that way."
A demanding standard of quality that comes from the heart
Ama doesn't just produce attiéké. She watches over it.
Each batch is checked, smelled, tasted according to our recipe — developed and perfected by O'Kassava to obtain a light, fragrant, authentic attiéké. There's no question of letting a product leave that doesn't reflect who we are.
